About Terrone

Terrone is a seasonal Mediterranean restaurant located on the Birgu waterfront at Fort St Angelo. Our daily-changing menu is guided by what’s best available on the day — from wild fish and local seafood to game, meat, and produce at their seasonal peak. Cooking draws on Italian and Maltese traditions, with both à la carte dishes and tasting menus shaped by the market.

Adrian Hili

Originally from Australia but with Maltese heritage, Adrian began his journey at Melbourne’s Rockpool before honing his skills at the world-renowned River Café in London. In 2014, he brought his passion for produce-driven cuisine to Malta, where he founded Terrone.

Since then, both Adrian and Terrone have gone from strength to strength, earning multiple accolades, including six consecutive years of Michelin Bib Gourmand recognition. Terrone is the culmination of Adrian’s experience, reflecting his personal approach to cooking—rooted in simplicity, seasonality, and a deep respect for quality ingredients.
